Baked Sweet Salmon


6 1" thick Salmon Steak Marinade:
1/2 Cup Brown Sugar
1/2 Stick melted Butter
3 Tblsp. Soy Sauce
2 Tblsp. Lemon Juice
2 Tblsp. White Wine or Water


After marinating for a few hours uncover pan and bake at 400 degrees for 15 - 20 minutes. bastinf fish every 5 minutes. Serve immediately.


Grilled Salmon

Rub both sides of Salmon filet with mayonnaise, or drizzle with olive oil. Sprinkle with salt & pepper. Grill on LOW heat for 7 minutes each side (with grill top down) Serve with fresh dill.


Baked Fish Filets



Orange roughy, capensis, sole, filets.
Place filets in buttered pan, brush with melted butter and sprinkle with salt & pepper, paprika. Pour either lemon or orange juice, or white wine, enough to cover the bottom of the pan. Bake @350 for about 20 minutes. Baste and serve!



Lobster Tail



Cut the lobster shell down the middle lenthwise. Pull the raw lobster meat out and place on top of the shell. Baste with a mixture of melted butter, lemon juice, and a pinch of garlic salt. Bake @ 350 for 12-15 minutes. Watch Closely!!!



Linguini with Seafood Sauce


6 oz. Clams
6 Oz. Baby Shrimp
6 Oz. mussels
6 Oz. scallops
Mozzarella Cheese
Linguini
1 tsp. garlic
1/2 cup chopped mushrooms
Pepper
6 Oz. plum tomatoes
2 Oz. brandy
1/2 cup scallions


Heat olive oil and saute garlic until golden. add scallions, mushrooms and pepper to taste. Stir in fish, cover and simmer 7 minutes. Remove from heat and add tomatoes and brandy (brandy is optional). Cover and cook mussels and clams until open. Toss with cooked linguini and sprinkle with fresh mozzarella.

Tip: Use Magnotto's freshly made Garlic or Parsley Linguini.




Orange Roughy



Brush filets with lemon juice and broil about 5 minutes. Mix 1/2 cup parmesean cheese, 4 Tblsp. butter, 3 Tblsp. mayonnaise, 3 Tblsp. chopped green onion. Sprean on top of filets and broil for 2-3 more minutes being careful not to burn them.


Orange Roughy II

Dip filets into mayonnaise, and then into cornmeal. Lay the fish onto a well buttered pan, drizzle with melted butter. Bake @ 375 for 10 minutes. Serve with Mustard Sauce.

Mustard Sauce:
1/2 Cup Olive Oil
2 Tblsp. Dijon Mustard
1 Tblsp. Vinegar
1 Tblsp. Sugar
1 Tblsp. Dillweed
